Zouhair Bouhlal and Guillaume Lutard, the chefs at ALCAZAR

Two chefs giving the table the place it deserves.

At ALCAZAR, the food needs to hold its own among the music, conversations and live entertainment.

At the helm, Zouhair Bouhlal and Guillaume Lutard bring together two complementary sensibilities and backgrounds around the same ambition: to offer genuine restaurant cuisine, equally at home with an à la carte dinner or a great evening of Paris s’éveille.

INTERSECTING INFLUENCES

Zouhair Bouhlal, several cultures in one cuisine

Italian-Moroccan chef Zouhair Bouhlal has built his career across different culinary cultures.

He notably spent several years in a three-Michelin-starred restaurant near Padua. An experience that shaped his approach to produce, precision and the construction of a dish.

A PRICE THAT FEELS RIGHT

An award that resonates with ALCAZAR

In 2026, La Liste recognised Casa Amor and Zouhair Bouhlal with the Festive Gastronomic Restaurant Award.

The distinction specifically rewards establishments capable of bringing together gastronomy, entertainment and staging.

Guillaume Lutard, a deep understanding of the house

Alongside him, Guillaume Lutard brings another essential dimension: his knowledge of ALCAZAR, how it works, its rhythm and its guests.

This continuity grounds the culinary project in the reality of the house.

Two backgrounds, one cuisine

The identity of the table is born precisely from this complementarity.

On one side, Zouhair Bouhlal’s international career, his Italian and Mediterranean influences and his experience of restaurants where gastronomy and celebration meet.

No unnecessary showmanship

The chefs’ philosophy can ultimately be summed up in a few simple principles.

  • A beautiful product.
  • Clear, honest flavour.
  • A dish you can understand.
  • Generosity without apology.

Cuisine that can change tempo

The work of the two chefs needs to respond to the two main rhythms of the house.

From Monday to Wednesday, the cuisine is enjoyed freely à la carte during the piano & vocals or live band evenings. Everyone composes their dinner according to their mood and the rhythm of their table.

From Thursday to Sunday, the menus accompany Paris s’éveille. The dishes find their place between the different artistic sequences so that cuisine, service and show move forward together.
